Try this delicious homemade vegetable soup with your favorite croutons and cheese on top.
Add a salad and dinner rolls and a nutritious dinner is ready to be served.
Ingredients:
1 26 oz. can tomato puree or
2 lbs fresh plum tomatoes, cut into wedges
1/2 cup red lentils
1 large onion, cut into quarters
1 carrot, cut into large pieces
1 stalk celery, diced
2 whole garlic cloves
2 tbsp. olive oil
2 quarts water
Salt and pepper to taste
Cooking instructions:
Place all ingredients in a large soup pot and cook on medium low heat for about 45 minutes. Allow to cool, then puree soup. Serve hot.
Yields: 8 servings
