Game Day Seafood Chowder




This heavenly seafood chowder is loaded with clams, shrimp, crab, potatoes and celery. Perfect dish to serve on game day, as this recipe can serve 30. Top with seasoned bread cubes if desired. A seafood lover's chowder delight!

Ingredients:

2 cups chopped onion
1 lb. chopped bacon
1/2 cup butter
1 8 oz. fish filet
1 cup of minced clams
3 cups clam juice, reserved from clams
1 cup whole clams
8 oz. pkg cooked salad shrimp
2 cups crab meat or imitation
1 cup chopped raw shrimp, peeled and deveined
2/3 cup diced celery
6 cups potatoes, chopped
1/3 cup chopped parsley

Soup starter:

2 quarts of half and half
5 cups water

Cooking instructions:

In a 2 quart saucepan, add 2 cups water, salt, pepper and fish. Bring to a boil, lower heat and simmer until fish flakes apart. In a large pot, melt butter on low heat. Fry bacon until crispy, add onions and saute until onions are transparent. Add fish and broth to onion mixture. Add clam juice, clams, chopped potatoes, celery 1/2 of chopped parsley. Add 3 cups water and bring to a boil. Turn heat to medium and simmer until potatoes are done. Slowly add cooked shrimp, raw shrimp and crab meat. Combine half and half slowly. Heat thoroughly and using soup starter to thicken. Stir constantly to desired thickness.
Yields: 30 servings
