Pierogies and Cabbage is a wonderful side dish that tastes excellent with any meat, especially ham or kielbasi. This pierogi recipe has homemade flavor and is simple to make, as you use frozen potato and cheddar pierogi. For an added touch, sprinkle the dish with bacon.
Ingredients:
1 package (16 oz.) frozen Potato and Cheddar pierogis
4 oz. sliced bacon, cut into 1/2 inch pieces
1 tablespoon vegetable oil
1/2 small head green cabbage (1 1/4 pounds), cut into 1/2 inch pieces
1 jumbo onion (12 oz), thinly sliced
2 medium tomatoes
2 teaspoons distilled white vinegar
1/2 teaspoon sugar
Salt
Cooking Instructions:
In a large saucepot, prepare pierogi in boiling salted water as label directs: drain. Meanwhile, in 12 inch skillet, cook bacon over medium heat until browed. With slotted spoon, transfer bacon to paper towels to drain. Discard all but 1 tablespoon bacon fat from skillet.
Add vegetable oil to skillet and heat over medium high heat. Add cabbage and onion and cook, covered, 10 minutes, stirring occasionally.
Dice 1 tomato; cut remaining tomato into thin wedges. Add diced tomato, white vinegar, sugar, and 1/2 teaspoon salt to cabbage mixture and cook 5 minutes, uncovered, stirring frequently.
Tuck pierogi and tomato wedges into cabbage mixture; heat through. Sprinkle with bacon.
Yields: 4 servings
