Classic Macaroni Salad Recipe




Macaroni salad is a classic side dish to serve with any summer meal. It tastes especially delicious with barbecued meats. Macaroni salad is great to take on picnics, too.



Ingredients:

1 lb. box elbow macaroni - prepared as directed
4 hard-boiled eggs - peeled, coarsely chopped
3 ribs celery - chopped
1/4 red bell pepper - diced
3 scallions - diced
1/2 cup sliced green or black olives
1/2 cup mayonnaise or creamy salad dressing
2 Tbls. milk
2 Tbls. distilled white vinegar
1 Tbls. granulated sugar
1 tsp. salt
1 tsp. pepper
paprika

Preparation:

Fold together all ingredients in large bowl. Refrigerate macaroni salad for 1 hour or overnight before serving.
Yields: 16 servings
