A sprinkle of lemon-pepper seasoning enhances the delicate flavor of haddock in this simple dish.
Ingredients:
1 pound fresh or frozen haddock or cod fillets
Lemon pepper seasoning
2 cups sliced fresh mushrooms
3 green onions, sliced (1/3 cup)
1 tablespoon margarine or butter
1/3 cup chicken broth
1/4 cup dry white wine or chicken broth
2 teaspoons cornstarch
Cooking Instructions:
Thaw fish, if frozen. Rinse fish; pat dry with paper towels. Cut fish into 4 serving size portions. Place in a 2 quart rectangular baking dish. Sprinkle with lemon pepper seasoning. Bake, uncovered, in a 450 oven till fish flakes easily with a fork (allow 4 to 6 minutes per 1/2 inch thickness).
For sauce, in a small saucepan cook the mushrooms and green onions in margarine or butter till tender. Stir together chicken broth, wine or chicken broth, and cornstarch; add to mushroom mixture all at once. Cook and stir till thickened and bubble. Cook and stir for 2 minutes more. Transfer fish to dinner plates. Spoon sauce over fish.
Makes 4 servings.
