Portabello mushroom salad is a great salad that can be served anytime of the year.
Its also a great vegetarian option or a salad that is delicious served with a good steak.
Ingredients:
4 oz Gorgonzola or other bleu cheese, crumbled
1 cup sour cream
1/4 cup mayonnaise
1 tbsp red wine vinegar
1 tsp minced garlic
4 Portobello mushrooms, 3-4 oz each
Extra virgin olive oil
Salt and pepper, to taste
2 romaine hearts
1 roasted red pepper, peeled, seeded and cut into 4 pieces
Preparation Instructions:
Using a fork, mash cheese to a paste. Stir in sour cream, mayonnaise, vinegar and garlic. Season to taste. Remove stems from mushrooms and scrape out gills with a small spoon. Score tops in a cross hatch pattern across each mushroom. Season mushrooms with olive oil, salt and pepper. Grill or broil the mushrooms, 2-3 minutes on each side, until cooked through. Cut romaine hearts in half and place on 4 plates. Drizzle with dressing. Top with mushrooms and add sliced red pepper, delicious portabello mushroom salad!
