This easy vegetable salad uses broccoli, cauliflower and carrots that are frozen. Vegetables are simply cooked and combined with mushrooms,
olives and Italian dressing to make an easy vegetable salad. Great for cold weather days, when fresh vegetables are harder to come by.
Salad is served cold.
Ingredients:
2, 16-oz. bags of frozen Broccoli, Cauliflower and carrots
1, 6 oz. can sliced mushrooms, drained
1 2.25 oz. can sliced black olives, drained
1 12 oz. bottle of Italian dressing
Preparation Instructions:
Simply steam the vegetables until just tender. Drain. Combine warm vegetables, mushrooms, olives, and dressing, stirring gently. Cover and refrigerate at least 4 hours or preferably overnight. When ready to serve, toss lightly.
Yields: 10-12 servings
