Carrot Salad Recipe




This delicious carrot salad will have even the children loving their carrots! Salad consists of caramelized carrots with cranberries, almonds, and blue cheese. This is a very flavorful and nutritious salad and great side dish.

Ingredients:

2 lbs carrots, peeled and cut on bias
1/3 cup dried cranberries
2 cup baby arugula, washed and dried
1/3 cup sliced almonds, lightly toasted
4 oz blue cheese, crumbled
1/4 cup canola oil
4 tbsp honey, divided
1/2 cup walnut oil
2 cloves garlic, minced
Salt
Black pepper

Preparation Instructions:

Toss sliced carrots with canola oil and 2 tbsp honey. Season with salt and pepper. Roast at 350 degrees for 25-30 minutes or until edges are starting to caramelize. Cool carrots completely.

Carrot Salad Dressing:

Mix walnut oil, remaining 2 tbsp honey, garlic, salt and pepper to taste in medium bowl and combine well. Put roasted carrots, dried cranberries, baby arugula, and almonds in a large bowl. Toss with dressing and serve immediately.
Yields: 4-6 servings
