This sweet potato casserole is a family favorite at Thanksgiving. It consists of mashed sweet potatoes that are combined with butter, brown sugar, cinnamon, egg and vanilla, and baked with a streusel mixture on top. Thanksgiving sweet potatoe casserole is a family tradition at my house. Enjoy!
Ingredients:
6 sweet potatoes
1/4 cup butter, cut up
1 egg
1 teaspoon vanilla
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/3 cup brown sugar
2 tablespoons milk
Topping:
1/3 cup butter, softened
1/4 cup flour
3/4 cup brown sugar
2/3 cup chopped pecans
Cooking Instructions:
Preheat oven to 350 degrees. Scrub potatoes and bake for 45 minutes. Allow to cool slightly then peel and mash (preferably with a mixer.) In large bowl, combine mashed potatoes; the cut up butter, egg, vanilla, salt, cinnamon, nutmeg, brown sugar and milk. Mix until smooth. Pour into casserole dish that has been sprayed with nonstick cooking spray.
Topping: Combine butter with flour, brown sugar and chopped pecans. Mix until crumbly. Best way to do this is with a mixer. Sprinkle topping over potatoes. Bake casserole for 35 minutes.
Yields: 6 to 8 servings
