Turkey Noodle Casserole




Turkey noodle casserole combines diced cooked turkey, cooked noodles, and vegetables in a creamy sauce. Thyme and sage give it a wonderful taste. Great way to make a turkey casserole from leftover turkey, too.

Ingredients:
2 cups diced cooked turkey
1 celery Stalk, diced
1 carrot, diced
1 small onion, chopped
1 or 2 cloves of garlic, crushed
1/2 cup sliced mushrooms
2 Tbsp olive oil
8 oz medium noodles
1 can Cream of Mushroom Soup
1 can Cream of Chicken Soup
1/2 cup sour cream
1 cup grated cheddar cheese
1/2 tsp ground sage
1 tsp thyme leaves
1 cup Cooked fresh or frozen green beans
Salt and Pepper to taste

Cooking Instructions:
Saute celery, carrot, onion and garlic in olive oil about 1 minute. Add mushrooms; saute another minute or until all vegetables are tender. Cook noodles according to the directions on the package. Drain noodles and mix with the vegetables and the remaining ingredients. Mix in green beans. Bake in a casserole at 350F for 45 minutes.
Yields: 6-8 servings
