Scalloped Ham and Potatoes




Scalloped ham and potatoes casserole has been a family favorite at my house for many years. I use leftover ham or spam when making this satisfying casserole and serve it with a fresh green salad. Delicious!

Ingredients:

1 pound ham pieces, or can of spam
4 thinly sliced potatoes
1 can (10 1/2 ounces) evaporated milk
1/2 cup chopped onion
1/4 cup butter
1/2 cup flour
dash pepper

Cooking Instructions:

Peel 4 potatoes and slice into thin slices. Cut ham in small bite size pieces. Butter a 2 quart casserole dish. Layer bottom with ham pieces; next layer with potatoe slices; sprinkle with flour, salt and pepper; dab about 1 tablespoon of butter and spoon some chopped onions over flour; repeat until all ingredients are used. Topping should be potatoes, flour, and onions. Pour canned evaporated milk over top. Add water so all is covered. Sprinkle top with paprika. Cover and bake at 350 for 1 hour. Remove lid and bake for 15 more minutes.
Yields: 6 servings
