Autumn fruit including grated apples and pears makes these breakfast muffins moist, healthy and delicious.
Serve up a batch of Autumn fruit breakfast muffins on a cool Autumn morning and watch them dissapear fast!
Ingredients:
1/2 cup shortening
1/2 butter
1/2 cup granulated sugar
1/2 cup light brown sugar
3 eggs
1 teaspoon vanilla
2 cups flour
1/2 cup whole wheat flour
3 teaspoons baking powder
1 teaspoon salt
1/3 cup molasses
2 apples, grated, peels left on
2 pears, grated, peels left on
Cooking Instructions:
With a hand mixer, cream shortening, butter and both sugars until fluffy. Add eggs and vanilla. Mix until blended. Sift dry ingredients and add. Once blended add molasses and mix well. Add fruit and mix by hand until incorporated. Pour into prepared muffin cups. Use muffin liners or spray a muffin pan with cooking spray. Bake 30-35 minutes at 375 degrees. Best served warm.
Yields: 12-15 servings
