It's hard to believe these tasty treats are actually good for you. I use this spinach ball recipe as a replacement for meatballs and serve them with pasta. Spinach balls are also great served as a brunch with eggs, or served at a party as an hors d'oeuvre.
Ingredients:
2 10 oz. pkg. of frozen spinach
1/4 cup finely chopped onion
2 cups herb seasoned stuffing mix
1 cup grated parmesan cheese
5 eggs - beaten
3/4 cup margarine
dash of garlic salt
dash of onion juice
dash of cayenne pepper
salt to taste
Cooking Instructions:
Cook spinach accordingly and drain well, then squeeze dry. Combine all ingredients, mixing well. Form into 1/2 inch balls and freeze on baking sheets until firm. Place in freezer bags to store. To serve, bake frozen balls 15 minutes at 350. Do not cook without freezing and do not microwave. Enjoy!
