This is a delicious appetizer, one you'll be proud to serve at your next special occasion or cocktail party. You'll get 10 crab stuffed mushrooms, so depending on how many people you'll be serving, you might want to double the recipe.
Ingredients:
20 large mushrooms
1 bottle Italian dressing
8 ounces crabmeat
3/4 cup fresh breadcrumbs
2 eggs, beaten
1/4 cup mayonnaise
1/4 cup onion, minced
1 teaspoon lemon juice
Marinate mushrooms in Italian dressing for 4-8 hours; drain. Preheat oven to 375 degrees. Combine crabmeat, a half-cup of breadcrumbs, eggs, mayonnaise, onion and lemon juice. Fill mushrooms with crab mixture. Top with remaining breadcrumbs; bake in oven for 15 minutes.
